We got two small jars of shiokoji home from the youth exchange, one with herbs and one without.
The one without herbs smells kind of similar to miso but the one with herbs smells like nail polish remover 😅
Any idea what went wrong? Is it just the herbs or did it go bad?
Nail polish remover is so specific 🤣 Do you think it could be classified as alcohol smell? In that case maybe it could be that it did a bit too much of an alcoholic fermentation. Maybe the rice we've used was too rich in sugar, therefore the yeasts produced too much alcohol. It's interesting to see that the other one with the herb didn't do the same...
