NATURAL WINE

Ingredients:

  • Fruits (grapes, plums, apples…)

  • Starter (for plums or apples, for grapes is the grape skin)


Materials:

  • Something to smash / extract fruit juice

  • Tank with bubbler on the lid

  • Containers


Preparation:

  1. Extract juice from the fruit (smash by hand the grape or grate the apple for example)

  2. Put it in a tank

  3. Add starter if needed (not for grapes as it is in the fruit skin), you can add full grapes (not smashed) in other fruit juice to help, or add an alcoholic starter you have it

  4. Mix and close the lid with bubbler

  5. Wait at least 24h to start the fermentation and have it active

  6. Remove the skin of the fruit by pressure and filtration

  7. Put it in a tank or a glass bottle with lid with bubbler

  8. Wait several weeks until it stops bubbling (no more sugar to ferment)

  9. Put it in a bottle (add a spoon of sugar if you want it bubbly)

  10. Enjoy!


Fermentation tips:

To create a starter: put fruit skin in a glass bottle, add water and honey, stir multiple times per day, after some days it’s gonna be active. It needs to be fed with water and honey. If it gets white on the bottom, remove this layer by filtering it.
