WILD HERBS DRINK

Ingredients:

  • Wild herbs

  • 2tbs sugar

  • 1L water

  • Starter (helpful but optional)


Materials:

  • Jars


Preparation:

  1. Put the herbs in the jar. Add the sugar and water. Mix until the sugar dissolves. Close the lid.

  2. Leave it at room temperature (15-25°C) until you see some activity/bubbles. Stir every day to prevent growth of slimy bacterias.


Fermentation tips:

The speed of the fermentation depends on the amount of wild yeasts and bacteria present on the herbs, the amount of sugar and the temperature. You can add tibicos, kombucha, ginger bug or wild yeast to speed up the process. You can also do the carbonation process to get a more fizzy drink (see soda lemonade recipe). Adding some fruits to the mixture can replace sugar and provide additional yeast.

You can collect any edible plants and add them to your drink. In general good sources of wild yeast are: grapes, plums (fruits with white bloom), ginger root, juniper berries, elderberries, wild grapes, elderflowers, blueberries, blackberries, figs, birch and aspen bark, unripe pinecorns..
