Ingredients:
3 organic lemons
100 - 150 g sugar
2L water
Materials:
Jars
beer bottles with mechanical cap
cheesecloth
Preparation:
Halve or quarter the lemons
Mix all the ingredients in the jar (lemons, water and sugar)
Cover the jar with cheesecloth and leave it to ferment for 3 to 5 days at room temperature (15-25°C). Stir every day!
Strain the liquid and pure it into the beer bottles. Don't fill them to the top.
Ferment for another 2 days.
Store in the fridge for up to 2 weeks.

Fermentation tips:
You can add different herbs and spices to ferment together with lemons to obtain different flavours.
Mixing the fermenting liquid prevents the development of unwanted microorganisms.
You can add organic ginger to speed up the fermentation as this is full of yeast.
