Ingredients:
Organic lemons
Water
Salt
Material:
Jars
Preparation:
Cut the top of the lemon off. Do other 3 or 4 cuts to create a rose petal shape (see Figure)
Sprinkle 2 tablespoons of salt inside each of the lemons
Squeeze some lemon juice in the jar and stuff the lemons inside
Add water with salt if the lemon are not covered with liquid
Close the lid and let it ferment for 3 weeks (better if longer, can go until 6 months)
Suggestion for other recipes:
Use the lemons in tajin, as a condiment to savoury dishes or add it to sauces.
Fermentation tips:
Add some ginger, nigella seeds or other spices to ferment together with lemons.
