For Kimchi there are many different recipes, this is just one example.
Ingredients:
Vegetables
Water
Salt
For the paste: rice flour, spices
Materials:
Jars
Grater
Preparation:
Grate the vegetables, add salt and massage
Let it rest for a few minutes then rinse in water to remove part of the salt
Create a paste with rice flour and the spices and add it to the vegetables
Store in a jar and let it ferment at room temperature (15-25°C) for at least 3 weeks
Fermentation tips:
Do not ferment under direct sun. Put a plate under the jar as the kimchi might leak out.
